A fluffy chocolate cake with simple ingredients and a small touch that makes it special: grating the chocolate with our ceramic grater plate to get fine shavings that melt beautifully into the batter.
Ingredients
- 150 g whole wheat or spelt flour
- 40 g unsweetened cocoa powder
- 70 g dark chocolate (minimum 70%)
- 2 eggs
- 80 g plain or unsweetened Greek yogurt
- 60 ml mild olive oil or coconut oil
- 80 g cane sugar, panela, or honey
- 1 teaspoon baking powder
- 1 pinch of salt
- 1 teaspoon vanilla extract (optional)
Step-by-step preparation
Preheat the oven to 180°C (350°F) and grease a round or rectangular baking pan.
Grate the chocolate using your ceramic chocolate grater. You'll see how it melts into fine, aromatic shavings, effortlessly and without blades. Set it aside.
In a bowl, beat the eggs with the sugar until the mixture is fluffy.
Add the yogurt, oil, and vanilla. Mix well.
Add the sifted whole wheat flour, cocoa powder, baking powder, and a pinch of salt. Mix with gentle folding motions until you have a smooth batter.
Add the grated chocolate shavings and stir gently.
Pour the batter into the prepared pan and bake for 30-35 minutes (test with a toothpick: it should come out clean, although a little moisture is perfect for a moist cake).
