We love autumn! And what vegetable is more autumnal than pumpkin? And what fruit is more autumnal and wintery than oranges? These cookies are the perfect excuse to enjoy a rainy day watching movies at home with a warm cup of coffee...
Ingredients:
2 cups of flour (any kind you prefer; you can always substitute almond flour or another gluten-free flour)
1/2 cup of pumpkin puree
1 egg (Apple puree is a great way to replace the egg if you want to make it vegan, and it works wonderfully in this recipe. Use 1/4 cup of apple puree)
1/2 cup of sugar (Or your preferred sweetener. You can use dates to sweeten without sugar)
1/4 cup of melted butter (If you want to make them vegan, substitute coconut oil)
Zest of one orange
1 teaspoon ground cinnamon
1/2 teaspoon grated walnuts
1/2 teaspoon ground cloves (optional)
1/2 teaspoon cinnamon
1/2 teaspoon grated ginger
1 teaspoon baking powder
A pinch of salt

Instructions:
Preheat oven to 180°C (350°F).
In a large bowl, mix the pumpkin puree, egg, melted butter, and orange zest (add a little orange juice if desired for extra flavor).
In another bowl, combine the flour, sugar, spices, ginger, grated walnuts (you can use a grater), baking powder, and salt.
Add the dry ingredients to the wet ingredients and stir until a dough forms. It's that easy!
Bake the cookies for 10-12 minutes, or until golden brown, and let them cool before enjoying.
The number of cookies you get from this recipe will depend on the size you make them. Generally, with the ingredients listed, you can expect to get about 24 to 36 cookies, each approximately 5 cm in diameter.
Finally... if you want to make them for Halloween, we definitely recommend using a fun-shaped mold!
