This delicious onion and cheese tart is perfect as a main course, served with a fresh green salad. The mild flavor of the grated onion blends perfectly with the cheese and the crispy pastry, creating an exquisite combination. I hope you enjoy it!
Ingredients
For the pastry:
- 200g flour (any kind you prefer)
- 100g cold butter, cut into small cubes
- 1 egg
- 2 tablespoons cold water
- A pinch of salt
For the filling:
- 3 large onions
- 150g grated cheddar or parmesan cheese
- Mushrooms
- 3 eggs
- 200ml heavy cream (or evaporated milk, your choice)
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions:
- Prepare the dough: In a large bowl, mix the flour and salt. Add the butter and rub it in with your hands until the mixture resembles breadcrumbs. Add the egg and cold water, and mix until a smooth dough forms. Shape the dough into a ball, cover it with plastic wrap, and refrigerate for at least 30 minutes.
- Meanwhile, peel the onions and grate them using a grater.
- Preheat the oven to 180°C (356°F).
- In a large skillet, heat the olive oil over medium heat. Add the grated onions and cook until softened and golden brown, stirring occasionally. Season with salt and pepper to taste. If desired, you can also add a pinch of nutmeg for extra flavor.
- In a separate bowl, whisk the eggs and mix with the heavy cream. Add half of the grated cheese (you can also grate it using the grater) and mix well.
- Roll out the dough on a floured surface and line a greased tart tin. Trim any excess dough from the edges.
- Spread the sautéed onions over the dough in the tart tin.
- Pour the egg, cream, and cheese mixture over the onions in the tin.
- Sprinkle the remaining grated cheese on top.
- Bake the tart in a preheated oven for approximately 30-35 minutes, or until golden brown and firm to the touch.
- Let it cool slightly before serving.
