We know that with this heat, all you crave is a refreshing gazpacho! 🌞 To give it a special touch, we've got a quick and easy recipe for a delicious topping using your grater plate.

Ingredients:

  • 50g toasted almonds
  • 50g feta cheese (or your favorite cheese)
  • 1/2 cucumber
  • 1/4 red bell pepper
  • 10 cherry tomatoes
  • 1/4 red onion
  • 1 clove of garlic
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon sherry vinegar
  • Fresh basil or mint leaves (optional)
  • Salt and pepper to taste

Preparing the Ingredients:

  • Use a grater to grate the feta cheese, cucumber, red bell pepper, red onion, and garlic.

Mixing the Topping:

  • In the same grater, add the tablespoon of extra virgin olive oil and the teaspoon of sherry vinegar. Mix well.
    Season with salt and pepper to taste.

Serving:

  • Once your gazpacho is ready, serve it in individual bowls and add a generous spoonful of this spectacular grated topping.
  • Add halved cherry tomatoes for garnish.
  • Garnish with fresh basil or mint leaves if desired.

This topping is designed to serve approximately 4 portions of gazpacho, assuming each portion is around 250 ml. If you have a larger batch of gazpacho or are expecting more guests, you can double or adjust the quantities accordingly.
