  • 1 sachet of baking powder
  • 1 pinch of salt
  • Zest of 1 lemon
  • Dried blueberries for garnish

Step-by-step preparation

1. Prepare the base mixture:
In a large bowl, mix the eggs with the coconut sugar until you get a frothy texture. This step is important for the muffins to be airy and soft.

2. Incorporate the liquid ingredients:
Add the olive oil, baking powder, and a pinch of salt. Beat again until all the ingredients are well combined.

3. Add the flour:
Gradually incorporate the coconut flour. Use an electric mixer to avoid lumps, and when the batter begins to thicken, finish mixing with a spatula to achieve a smooth consistency.

4. Add the finishing touch:
Add the lemon zest and ginger juice. These ingredients provide a fresh aroma and a slight spiciness that makes all the difference. Mix well.

5. Prepare the molds:
Pour the batter into muffin tins. Fill them a little more than halfway, leaving room for them to rise in the oven. Garnish with dried blueberries on top.

6. Bake: 

Preheat the oven to 220°C (425°F). Once you put the muffins in, lower the temperature to 200°C (400°F) and bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
