Onion, Carrot and Grated Pepper Croquettes

Ingredients:

 

- 1 large onion

- 2 medium carrots

- 1 red bell pepper

- 1 green bell pepper

- 2 eggs

- 1/2 cup breadcrumbs (approximately)

- 1/4 cup flour (any kind you like)

- 1 teaspoon salt

- 1/2 teaspoon black pepper

Instructions:

 

  1. Wash and peel the carrots, onion, and bell peppers.
  2. Use a grater to grate all the vegetables separately.
  3. Once grated, drain the excess liquid from the vegetables by pressing them with your hands or using a colander.
  4. In a bowl, add the grated vegetables, the eggs, and mix well.
  5. Add the flour, salt, and pepper to the vegetable and egg mixture. Stir until you have a smooth batter.
  6. Place the breadcrumbs on a separate plate.
  7. Take portions of the grated vegetable mixture and shape them into croquettes with your hands.
  8. Roll each croquette in breadcrumbs, making sure they are completely coated.
  9. Heat enough oil in a large frying pan over medium-high heat.
  10. Fry the croquettes in the hot oil until golden brown and crispy on both sides. This may take about 3-4 minutes per side.
  11. Place the cooked croquettes on a plate lined with paper towels to absorb any excess oil.
  12. Serve the onion, carrot, and bell pepper croquettes while they are hot and enjoy this delicious and flavorful treat.

Tip: If you like, you can use an air fryer!
