Recipe: Zucchini snack with creamy tahini sauce

This zucchini snack is one of those that surprises: simple, tasty, and with a citrusy and umami touch that makes it special. Ideal for a different kind of snack.

Ingredients:

For the sticks:

  • 1 zucchini
  • Extra virgin olive oil
  • Ground ñora pepper
  • Sesame seeds

For the creamy tahini sauce:

  • 1 natural plant-based yogurt
  • 1 tablespoon tahini
  • Juice of 1/2 orange
  • 1 clove black garlic
  • 1 teaspoon white miso
  • Pepper to taste

Step by step:

For the zucchini sticks:
1. Cut the zucchini into medium-sized sticks.
2. Toss them with a drizzle of extra virgin olive oil, ground ñora pepper, and sesame seeds until well coated.
3. Bake at 200ºC (390ºF) for 20 minutes, or until golden brown and crispy on the outside.

For the dip:
1. In a blender, combine the orange juice, grate the black garlic, add the white miso, tahini, and yogurt.

2. Blend until smooth and creamy.

Serve the warm zucchini sticks with the dip on the side… and be amazed by this flavorful combination of citrus sweetness and umami.
